1/3 cup butter
1/4 cup diced red pepper
1/4 cup diced yellow onion
1/2 cup all-purpose flour
4 cups shrimp, fish or chicken stock
1 1/2 cups heavy cream
1/3 cup cream sherry, or to taste
1/2 teaspoon salt
1/4 teaspoon white pepper
1/2 pound prepared crab meat

In a large saucepan, melt butter over medium-high heat. Stir
in pepper and onions; saute until tender. Stir in flour and cook
1-2 minutes. Whisk in stock, heavy cream, sherry, salt, and
pepper. Simmer 20 minutes, stirring often. Add cleaned crab meat
and serve.

Yield: 6 servings.
