Salad: 1 1/2 pounds fresh broccoli 2 green onions, chopped 1 (4-ounce) jar diced pimiento, drained 1/2 cup raisins 1/2 cup dry roasted peanuts Dressing: 1/2 cup mayonnaise or salad dressing 2 tablespoons honey Trim off large leaves of broccoli, and remove tough ends of lower stalks; wash broccoli thoroughly. Cut stalks into 1/4-inch slices. Cut remaining broccoli into flowerets; place broccoli in a large bowl. Add green onions, pimiento, raisins, and peanuts. Dressing: Combine mayonnaise and honey in a small bowl; spoon dressing mixture over top of broccoli mixture. Toss gently to coat. Cover and chill 2 hours. Yield: 6 servings.
