1 large head Romaine lettuce (or 2 bags of salad)
1 cup shredded Swiss or Mozzarella cheese
1 cup cashews
1/4 cup cranraisins
1 apple, cubed
1 pear, cubed

1/2 cup sugar
1/3 cup lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon salt, optional
2/3 cup vegetable oil
1 tablespoon poppy seeds

Toss all ingredients. Add dressing; toss to coat.

Dressing: Whisk or blend all ingredients together except oil.
Add oil slowly to mixture, blending well.

Yield: 8 servings.
