1 (10-ounce) package frozen chopped spinach 1 egg, beaten 1/4 cup Parmesan cheese 3/4 cup Italian seasoned bread crumbs 12 skinned, boned chicken breast halves Salt and pepper to taste 3 tablespoons butter or margarine Cook spinach as directed. Drain. Allow to cool. Combine spinach with egg and 1 tablespoon Parmesan cheese. Set aside. Combine bread crumbs and rest of cheese. Sprinkle chicken with salt and pepper. Then roll in bread crumb mixture. Place in a greased 13x9-inch pan. Place heaping tablespoon of spinach mixture on each breast, spreading to form a small mound. Sprinkle remaining crumbs on top. Drizzle with butter. Bake at 350 degrees for 40 minutes. Yield: 6-8 servings.
