4 Cornish hens, halved Apricot Glaze: 1/2 cup melted butter 1/2 cup orange juice 3/4 cup apricot preserves 1 cup light brown sugar Place Cornish hen halves in 13x9-inch pan, skin side up and broil until browned. Apricot Glaze: Mix glaze ingredients in saucepan and cook until thickened. Pour glaze over browned hens and bake at 350 degrees for about 1 hour. Baste frequently. Yield: 8 servings.
