6 ounces grated sharp Cheddar cheese 4 cups chopped cooked chicken or turkey 1 pound hot sausage 1 pound mild sausage 3 cans cream of mushroom soup 1 can cream of celery soup 8 ounces fresh mushrooms, sliced 1/2 large onion, chopped 2 boxes Uncle Ben's long grain and wild rice (cooked according to package directions) Brown sausages and crumble. Saute mushrooms and onions in sausage grease. Drain. Add soups and chicken to mixture. Put into a greased 13x9-inch casserole dish. Sprinkle with cheese. Bake at 350 degrees about 45 minutes.
