ORANGE-GINGER CHEF'S PRIME

2-3 pound boneless pork rib-end roast
3/4 cup orange marmalade
2 tablespoons lemon juice
1/2 teaspoon ground ginger
1/2 teaspoon dry mustard

Roast pork in a shallow pan in 350 degrees oven for 30 minutes.
Meanwhile, stir together remaining ingredients for basting glaze.
Continue to roast pork for 20-30 minutes more, basting occasionally
with glaze, until internal temperature of pork reaches 155 degrees-160 degrees.
Let roast stand for 5 minutes before serving.

Yield: 6 servings.
