1 (2-inch thick) sirloin steak (approximately 3 1/2 pounds) 1 tablespoon peppercorns Marinade: 1 cup dry red wine 1/2 cup olive oil 1 scallion, minced 1 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon Dijon mustard 6 parsley sprigs 1 bay leaf Rub steak with peppercorns. Mix marinade and marinate meat 6 hours or overnight, turning occasionally. Cook on grill 12 minutes on each side or according to desired doneness. Slice thin. Yield: 8-10 servings.
