2 eggs, beaten 3/4 cup soft breadcrumbs 1/2 cup tomato juice 2 tablespoons parsley 1/2 teaspoon oregano 1/4 teaspoon salt 1/4 teaspoon pepper 1 garlic clove, minced 2 pounds lean ground beef 8 slices boiled ham 6 ounces shredded Mozzarella cheese Mozzarella slices, cut into triangles, for top Combine meat, eggs, bread crumbs, tomato juice, and spices. On waxed paper pat into 12x10-inch rectangle. Arrange ham on top leaving a slight edge all around. Sprinkle cheese over ham. Starting from long end roll up meat. Seal edges and ends. Place roll, seam side down in 13x9-inch pan. Bake at 350 degrees for 1 1/4 hours. Place cheese wedges over top, return to oven until cheese melts. Yield: 6 servings.
