Basic boiled grits 3/4 cup grated Cheddar cheese Tabasco sauce to taste White pepper 1 pound fresh shrimp 6 slices bacon Peanut oil 2 cups sliced mushrooms 1/2 cup sliced scallions 1 garlic clove, minced 6 teaspoons lemon juice 1 teaspoon fresh chopped parsley Prepare grits according to package directions. Season lightly with Tabasco and white pepper. Stir in cheese. Hold in top of double boiler over simmer. Peel and clean shrimp. Rinse and pat dry. Dice bacon and saute lightly in a skillet (browned but not crisp). Add enough peanut oil to have a layer of fat. When quite hot, add shrimp in even layer and turn shrimp as they "pinken". Add mushrooms, scallions, and garlic. Stir fry. Season with lemon juice. Serve over grits. Yield: 4 servings.
