2 tablespoons butter or margarine 1 tablespoon plus 1 1/2 teaspoons all-purpose flour 3/4 cup milk 1/4 teaspoon salt Dash of pepper Dash of paprika 2 tablespoons dry sherry 1/2 pound cooked, peeled, and deveined small shrimp Grated Parmesan cheese Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt, pepper, paprika, sherry, and shrimp. Spoon into 2 (10-ounce) ramekins; sprinkle each with Parmesan cheese. Broil 3-4 inches from heat until cheese is lightly browned. Yield: 2 servings.
