4 (3-ounce) flounder fillets 1 tablespoon lemon juice 1/4 cup grated Parmesan cheese 1/8 teaspoon salt 2 tablespoons butter or margarine, softened 1 1/2 tablespoons mayonnaise or salad dressing 1 1/2 tablespoons chopped green onion tops Dash of hot sauce Green onion strips, optional Lemon wedges, optional Place fillets on a lightly greased broiler pan and brush with lemon juice. Combine cheese and next 5 ingredients, mixing well. Set aside. Broil fillets 4 inches from heat, 6-8 minutes. Spread cheese mixture evenly over fish; broil 2-3 minutes more, or until fish flakes easily, when tested with a fork. Garnish if desired. Yield: 4 servings.
