1 1/2 pounds medium mahi-mahi fillets, cut into serving-size pieces 1 tablespoon extra virgin olive oil 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1 tablespoon pressed garlic 1 tablespoon minced fresh ginger (may use scant teaspoon ground ginger) 1 teaspoon fresh lime juice 2 teaspoons chopped fresh parsley In small bowl, combine olive oil, salt, pepper, garlic, ginger, and lime juice. Brush over fish. To broil, place fish about 4 inches from heat. May grill. Cook until one side is done, about 4-5 minutes. Turn over and repeat on the other side. Test for doneness, depending on thickness of fillets. Sprinkle with parsley. Yield: 6-8 servings.
