1/2 small onion (1/4 cup slices) 1 1/2 cups already-sliced fresh button mushrooms 1/2 red or green pepper thinly sliced 1 partially baked pizza crust 2 tablespoons Dijon mustard 1/4 cup reduced fat sour cream 3/4 cup cooked chicken chunks 3/4 cup deli ham chunks 1 cup shredded Swiss cheese Preheat oven to 450 degrees. Peel onion half and thinly slice it. Place slices in a 2-quart microwave-safe dish. Add mushrooms and pepper slices. Cover dish with plastic wrap and vent one corner. Microwave (high) for 3 minutes until wilted, and mushrooms have released their liquid. While vegetables are cooking, place pizza crust on an ungreased baking sheet. In a bowl, stir together mustard and sour cream, then spread mixture evenly over crust. Take chicken chunks and ham chunks and sprinkle them evenly over sauce. Remove vegetables from microwave and drain any liquid from dish. Spread vegetables evenly over meat. Sprinkle cheese evenly over pizza. Bake, uncovered, 10 to 12 minutes or until pizza begins to brown at edges. Yield: 4 servings.
