2 1/2 pounds fresh green beans
3 cups water
1 cup sliced mushrooms, fresh
1/3 cup onion, chopped
3 garlic cloves, crushed
1 (8-ounce) can sliced water chestnuts, drained
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried whole basil
1 teaspoon Italian seasonings
1/3 cup olive oil
1/4 cup grated Parmesan cheese
Wash beans, trim ends and remove strings. Boil in water for
6-8 minutes on simmer or until crisp- tender. Drain and plunge
into ice water. Drain and set aside. Saute mushrooms and next 7
ingredients in oil in a Dutch oven. Stir in beans and cook until
thoroughly heated. Sprinkle with cheese.
Yield: 8-10 servings.
