2 boxes chopped broccoli 2 eggs, well beaten 1 (4-ounce) can mushrooms, drained 1 can cream of mushroom soup 1 cup grated sharp Cheddar cheese, grated 1/2 cup mayonnaise 1 small onion, finely chopped Salt and pepper, to taste Ritz cracker crumbs for topping Thaw broccoli and drain. Mix all ingredients except cracker crumbs. Pour in greased 13x9-inch casserole dish. Top with crumbs. Bake at 350 degrees for about 1 hour or until bubbly. Yield: 6-8 servings.
