1 (10-ounce) package frozen sliced okra
1 (10-ounce) box frozen whole kernel corn
2 (10-ounce) cans diced tomatoes and green chiles
1 (15-ounce) can black beans, rinsed and drained
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1 cup shredded reduced-fat Cheddar cheese
Combine first 6 ingredients in a large saucepan. Cover and
cook over medium heat 8 minutes, stirring occasionally. Sprinkle
with shredded cheese before serving. Serve with a slotted spoon.
Yield: 6 cups.
