SWEET POTATO SOUFFLE


Potatoes:
3 cups cooked mashed sweet potatoes (may use
canned)
2 eggs
1/2 teaspoon salt
1 cup sugar
1/2 cup milk
1 teaspoon vanilla

Topping:
1 stick butter
1 cup light brown sugar
1 cup chopped pecans
1/2 cup all-purpose flour

Mix potatoes with next 5 ingredients. Put in buttered
13x9-inch dish. Mix topping ingredients and sprinkle on top. Bake
at 400 degrees for 30-40 minutes.

Yield: 6-8 servings.
