1 (6-ounce) package corn muffin mix 2 eggs, beaten 1 (8-ounce) carton sour cream 1 can French onion soup, undiluted 1 (10-ounce) package frozen chopped spinach, thawed and drained 1/2 cup butter or margarine, melted 1/2 cup (2 ounces) shredded Cheddar cheese Combine first 6 ingredients; stir until blended. Spoon into a greased 12x8-inch baking dish. Bake at 350 degrees for 25 minutes; top with cheese, and bake 5 minutes. Yield: 8 servings.
