3-4 medium yellow squash
1 large sweet onion, chopped
4 eggs, beaten
1/2 stick melted butter or margarine
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1 large tomato
1 1/2 cups grated sharp Cheddar cheese
1/2 cup mayonnaise
1/2 cup sour cream
Cook squash and 1/2 cup chopped onion until tender, drain well.
Mix beaten eggs, butter, Parmesan cheese, salt, and squash. Pour
into a 4-quart casserole dish. Peel and slice firm tomato and
place on top. Spread on top remaining chopped onion.
Topping: Stir together 1 1/2 cups grated sharp Cheddar cheese,
1/2 cup mayonnaise, and 1/2 cup sour cream. Spread on top of
casserole. Sprinkle paprika on top. Bake at 350 degrees for 45 minutes
to 1 hour until bubbly.
Yield: 6-8 servings.
