TOMATO PIE

4 summer-ripe tomatoes, peeled and sliced
8 to 10 fresh basil leaves, chopped
1/3 cup chopped green onions
1 (9-inch) pre-baked deep-dish pie crust
Salt and pepper to taste
1 cup grated Mozzarella cheese
1 cup grated Cheddar cheese
1 cup mayonnaise

Preheat oven to 350 degrees. Layer tomato slices, basil, and onion in
pie shell. Add salt and pepper. Mix cheese and mayonnaise.
Spread on top and bake for 30 minutes or until lightly brown.

Yield: 6 servings.
