3 bananas, mashed
1 cup sugar
1 unbeaten egg
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup pecans, chopped
Mix bananas, sugar, and egg. Sift flour, baking soda, baking
powder, and salt. Add wet ingredients to dry ingredients. Fold in
nuts. Bake at 325 degrees for 45 minutes or until wooden pick comes out
Yield: one loaf.
