1/2 cup butter 1 1/4 cups sugar 2 eggs 1 1/4 cups canned yams, mashed (or sweet potatoes) 1 1/2 cups all-purpose flour 2 teaspoons baking powder 1/4 teaspoon salt 1 teaspoon cinnamon 1/4 teaspoon nutmeg 1 cup milk 1/2 cup chopped pecans 1/2 cup raisins Preheat oven to 400 degrees. In mixing bowl, cream butter and sugar. Add eggs and mix well. Blend in mashed yams (or sweet potatoes). Sift flour with baking powder, salt, cinnamon, and nutmeg. Add alternately with milk. Do not overmix. Fold in nuts and raisins. Put in lined muffin tins about 2/3's full. Bake 25 minutes. Yield: 2-3 dozen.
