1/2 cup butter or margarine, softened
1/2 cup sugar
3/4 cup applesauce
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup butter or margarine, melted
1/4 cup sugar
1/8 teaspoon ground cinnamon
Cream 1/2 cup butter; gradually add 1/2 cup sugar, beating
until light and fluffy. Add eggs, one at a time, beating well
after each addition. Stir in applesauce. Combine flour, baking
powder, and salt; add to creamed mixture, and stir just until
moistened. Spoon batter into lightly greased miniature muffin
pans, filling 2/3's full. Bake at 425 degrees for 15 minutes or until
done. Remove from pan immediately, and dip muffin tops in melted
butter. Combine 1/4 cup sugar and cinnamon; sprinkle sugar mixture
over each muffin.
Yield: About 3 1/2 dozen.
