1 1/2 cups Wesson oil 2 cups sugar 4 eggs 2 1/2 cups self rising flour 2 teaspoons vanilla 2 teaspoons cinnamon 1/4 teaspoon salt 3 cups Macintosh Apples, peeled and chopped fine Icing: 1 (8-ounce) package cream cheese (room temperature) 1 stick margarine (room temperature) 2 teaspoons vanilla 1 (16-ounce) box confectioners sugar 1 cup chopped pecans Mix cake ingredients as listed. Pour into 3 (9 inch) greased and floured pans. Bake at 325 degrees for about 30 minutes. Cool. Frost with cream cheese icing. Icing: Cream cheese and margarine with an electric mixer; add vanilla. Slowly add one box sugar and mix until well blended; stir in chopped nuts. Ice between layers and on top and sides. Yield: one 9-inch cake.
