1 package yellow cake mix with pudding 1 (11-ounce) can mandarin oranges (retain juices) 1/2 cup vegetable oil 4 eggs 3/4 cup chopped nuts, optional Icing: 1 (20-ounce) can crushed pineapple 1 small (3.4-ounce) package instant vanilla pudding mix 1 cup Cool Whip Mix cake mix, oil, eggs, and juice from oranges until well blended. Add oranges and nuts (optional); stir slightly. Pour into two 9-inch cake pans which have been greased and floured. Bake at 325 degrees for 25 minutes, or until toothpick comes out clean. Allow to cool. Icing: Gradually add pudding mix to a bowl containing crushed pineapple and juice. Fold in Cool Whip. Ice between layers and on top and sides. Refrigerate.
