Crust: 1 box chocolate wafer cookies 1/3 cup unsalted butter, melted Cheesecake: 1 1/3 cups semisweet chocolate morsels 1 1/2 cups sugar 1 tablespoon cocoa 1 (8-ounce) container sour cream 3 (8-ounce) packages cream cheese, softened 3 eggs 1 1/2 teaspoons vanilla Icing: 1 1/2 cups heavy cream 3 tablespoons cocoa 2 tablespoons confectioners sugar 1 teaspoon vanilla Crust: Combine butter and crushed chocolate wafers; press into 9-inch springform pan and bake at 350 degrees for 6-8 minutes. Cheesecake: Melt chocolate morsels. Beat cream cheese until light and fluffy, gradually adding sugar; mix well. Add eggs, one at a time, mixing well after each. Stir in melted chocolate, cocoa, and vanilla. Mix well. Stir in sour cream until well blended. Bake at 300 degrees for 1 hour and 40 minutes with a pan of water underneath. Cool and run a knife around sides. Chill 8 hours. Frost with icing. Icing: Combine 4 ingredients and beat until peaks form. Spread on cooled cheesecake. Yield: one cheesecake.
