Add 2 cups warm water to mix (mix is 1 pkg. taboli salad mix found in produce section of Chatham Harmon's on hanging rack) and let soak while preparing the following: Chop fine 3 or 4 fresh tomatoes, or 1 can diced, drained tomatoes, 1 small cucumber and 2 bunches of green onions with tops. Into a large mixing bowl, mix 1/3 cup olive oil, 1/2 cup lemon juice, 1 tsp. salt, 1 tsp. black pepper. Combine everything and mix well. Refrigerate at least four hours in a covered container.
