1 chicken cut-up with skin removed
3-4 medium onions, chopped
2 carrots, peeled and sliced
8 gloves garlic (use less if you want)
8 c. water (or you can use some chicken broth)
1/2 c. white or brown rice
2 Tbsp. parsley
1/4 tsp. cayenne pepper (optional)
4 tsp. soy sauce (optional) stir in at the end of
cooking

Bring to a boil. Simmer for 1 hour.
