8 large flour tortillas
shredded cheddar cheese
white chicken cooked
sour cream, chopped onions, lettuce, optional
Spray large skiller with non-stick spray. Have all ingredients
ready by the stove because they need to be assembled quickly and
cook quickly. When pan is not, place one tortilla in the pan.
Place chicken, cheese and 2 Tbsp. salsa evenly over the tortilla.
Place another shell on top and press down gently. Watch closely.
It will be ready to flip within a minute. Lift edge. When
tortilla begins to brown, take two spatulas and turn entire
quesadilla to cook reverse side. Lift onto serving plate, cut into
wedges, and serve hot with sour cream, if desired. Repeat process
for additional quesadillas. Yield 4.
