2 Tbsp. butter
1/4 c. chopped onion
1/4 c. chopped green pepper
1/4 tsp. oregano
4 c. sliced or chunked (1/4" thick) zucchini
1 large tomato cut into wedges
1 c. shredded cheddar cheese
Place first five ingredients in skillet, cook slowly until zucchini
is tender. Add tomato and let steam for 5-10 minutes. Salt and
pepper to taste, add cheese, let melt and serve.
