Pare cucumber, then score by running fork down cucumber. Cut crosswise into very thin slices; soak in ice water mixed with vinegar, salt and pepper. Remove from mixture after 30 minutes or more. Pat dry on towel. Serve dry or stir into sour cream. (I leave them in a small amount of water vinegar, salt and pepper mixture.) For more attractive dish, do not peel cucumber.
