1/2 c. unsalted butter
4 large Vidalia sweet onions, sliced into 1/4 inch rings
12 oz. shredded cheddar cheese
salt and pepper to taste
3 large eggs, beaten
1 c. milk
50 butter crackers, Town House, or Ritz, crushed
Sauté onions until clear and limp in 1/4 c. butter. Use wok.
Beat eggs and milk. Crush crackers. Layer part of the crackers on
bottom of 9x13 inch greased pan, then onions, then cheese; pour
egg/milk mixture over the top. Sprinkle with the rest of crackers.
