4 lbs. yams
1 tsp. salt
1 c. brown sugar
1/2 c melted butter
2 Tbsp. grated orange rind
2 Tbsp. lemon juice
1/4 c. orange juice
1/2 c. chopped nuts
1/4 tsp. cinnamon
dash of mace
1 c. sliced bananas
Cover yams with water; add salt and cook until tender. Peel yams and
mash until smooth. Add remaining ingredients except marshmallows.
Mix thoroughly. Place in greased 2 qt. casserole. Bake at 350 degrees for
30 minutes. Sprinkle with enough marshmallows to cover; brown
lightly before serving.
