ZUCCHINI BREAD

4 eggs
3 cups sugar
1 1/2 cups oil
1 1/2 tsp. vanilla
3 cups zucchini, peeled, grated, and loosely packed
3 cups flour
1 Tbsp. baking soda
1 tsp. baking powder
1 1/2 tsp. salt
3 tsp. cinnamon
1 tsp. grated orange peel
1 1/2 cups chopped nuts

Beat eggs until frothy. Add sugar, oil, and vanilla; beat well until
thick and lemon colored. Stir in zucchini. Sift together flour,
baking soda, baking powder, salt, and cinnamon; add to zucchini
mixture. Fold in orange peel and nuts. Pour into 2 greased and
floured 9x5 loaf pans. Bake at 350 degrees for 1 hour or until done. Let
cool in pans for 10 minutes before removing.
