1 cup yellow cornmeal 1 cup flour 1 8-oz. can of corn (drained) 1/2 cup sugar 2 tsp. baking powder 1 cup sour cream 2 eggs 6 Tbsp. oil Preheat oven to 375 degreesF. In large bowl, combine all ingredients. Stir to mix well. Divide the mixture evenly in generously greased muffin cups, filling almost to the top. Bake 10-15 minutes or until golden brown. Cool in pans on wire rack for 5 minutes. Serve warm with honey. Makes 18.
