1 stick butter 1 c. sugar 1 1/2 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp salt 1 egg 1 tsp. vanilla 1/2 c. unsweetened cocoa powder 1 c. 1% milk 2 c. flour Filling: 6 Tbsp. butter, melted 1 c. plus 2 Tbsp. confectioner sugar 1 c. plus 2 Tbsp. marshmallow cream 1 1/2 tsp. vanilla Heat oven to 375 degrees. Grease cookie sheet. Beat together stick butter, sugar, baking soda, baking powder, and salt in a large bowl on medium speed until fluffy. Beat in egg, vanilla, and cocoa until blended. With mixer on low, slowly beat in milk until blended. By hand, stir in flour. Drop level tablespoons on baking sheet. Bake 8 minutes or until tops spring bake when lightly pressed. Cool 1 minute before removing. With a spoon vigorously mix 6 Tbsp. butter, confectioners sugar, marshmallow cream, and vanilla. Spread 2 tsp. onto flat side of half of cookies; top each with another cookie, pressing to adhere. Yields: 30.
