3/4 c. white rice, uncooked 2 c. milk, divided use 1/3 c. sugar 1/4 tsp. salt 1 egg, beaten 1 Tbsp. butter 1/2 tsp vanilla Combine rice with 1 1/2 c. water in medium saucepan and cook over medium high heat until it comes to a boil. Reduce heat, cover and simmer for 20 minutes until rice is done. Add 1 1/2 c. milk, sugar, and salt. Cook over medium heat, stirring frequently, until thick and creamy, about 15-20 minutes. Add beaten egg to remaining 1/2 c. milk and stir into rice mixture. Cook for 2 minutes longer, stirring constantly. Remove from heat; stir in butter van vanilla. Serve warm. Notes: May add 2/3 c. of golden raisins when you add the egg. Sprinkle with cinnamon or nutmeg if desired.
