1/2 c. butter 1/2 c. brown sugar 1 c. flour pinch baking powder 1 tsp. vanilla extract 1 egg, separated 1/2-1 c. chopped pecans 1/3 c. jelly or preserves Cream butter with brown sugar. Sift flour with baking powder, then add to mixture. Add egg yolk and vanilla. Shape into balls. Dip the balls in unbeaten egg white, then roll in nuts. Place on ungreased cookie sheet. Press thumb in center of ball, forming a "hole". Bake at 350 degrees for 10-12 minutes. Cool. Fill "hole" with jelly or preserves.
