2 c. butter, softened 1 16 oz. can solid pack pumpkin 4 c. flour 1 tsp. baking powder 1 12 oz. bag vanilla baking chips 2 c. sugar 2 eggs 2 tsp. pumpkin pie spice 1/2 tsp. baking soda Preheat oven to 375 degrees. Grease cookie sheet. Beat butter and sugar until light and fluffy. Add pumpkin and eggs; beat until smooth. Add flour, pie spice, baking powder and soda; beat until blended. Stir in chips. Drop by teaspoonfuls about 2 " apart onto cookie sheets. Bake about 16 minutes or until set. Cool 1 minute on cookie sheets. Remove from sheets to wire rack to cool. Frost with Cream Cheese Icing. Cream Cheese Icing: 1 16 oz. container cream cheese frosting 1/4 c, packed brown sugar Combine frosting and brown sugar in small bowl, mix well. Spread on warm cookies.
