1 gallon whole milk 1 junket tablet Heat 1 gallon whole milk to lukewarm temperature. Dissolve 1 junket tablet in 2 tablespoons milk. Add to warm milk and stir. Let stand for 20 minutes. Break up congealed milk with hand. Pour 2 cups mixture into strainer, turn into palm of hand and shape into a 1 inch thick patty. Yields approximately 8 patties. Store in air-tight container in refrigerator. Alternate Method: 1 gallon milk 1 pint heavy cream Bring to boil then add 1/3 cup white vinegar. Proceed as above.
