1 large eggplant (with skin)
3 Tbsp. tahini
2 Tbsp. water or more if needed
Juice of 2 lemons
1 clove garlic
Salt to taste
In Electric Oven or Grill: Place eggplant on a tray, prick the
skin with a fork, and place under broiler. Turn on all sides until
thoroughly cooked. After broiling eggplant, peel. Mash with fork,
food mill or electric mixer. Crush garlic and salt together. Stir
tahini, water and lemon juice together, then mix with eggplant.
Garnish with parsley and oil. Serve with pita bread triangles.
