1/8 cup freshly squeezed lemon juice
1/2 cup olive or canola oil
1 tsp. dried mint
1/2 tsp.salt
Pepper to taste

Combine all the ingredients in a jar with a tight fitting
cover. Shake vigorously. Chill. Use on garden and spinach
salads. Can also be used on other green leafy vegetables, broccoli
etc. (Add a taste of garlic powder to these.)
