2 loaves flat Syrian or Pita bread
1 cucumber, cubed
1 or 2 tomatoes
1/4 head lettuce, chopped
1/2 bunch scallions, chopped
1/2 cup parsley, chopped
3 Tbsp. oil
Juice of 1 lemon
1 Tbsp. fresh or dried mint leaves, chopped
Salt and pepper to taste
Place bread in low heated oven until crisp or toast bread if
preferred. Break in bite-size pieces. Add remaining ingredients
