2 lbs. small spinach leaves
1/2 cup chopped pine nuts
1/4 cup olive oil
1/4 tsp. lemon peel
3 Tbsp. vinegar
1/2 tsp. salt
Optional: 1 small onion, chopped
Wash and drain the spinach. Tear the leaves in bite-size
pieces. Toast the nuts lightly in 350 degrees F oven for 5 minutes. Mix
the oil, vinegar, lemon and nuts and pour over the spinach. Add
salt and pepper and mix.
