GREEN BEAN SALAD

1 lb. fresh green beans, cooked and cut or 1 large can green beans
(drained)
Juice of one lemon
2 Tbsp. oil
1/4 bunch scallions, chopped
1/2 cup fresh parsley, chopped
Salt and pepper to taste

Combine all ingredients and chill. Optional: Add tomato wedges,
chopped celery leaves and mint leaves

Variations: Add frozen or canned broccoli, green Lima beans,
kidney beans, fresh and finely chopped spinach, kale, endive or
watercress.
