1 cup lentils 1 large onion, chopped 1 cup flat noodles 2 cups spinach, chopped 1/4 cup oil Salt and pepper to taste 4 cups water Juice of 1 lemon, if desired Sort, clean and rinse lentils. In saucepan, add lentils and water. Bring to a boil and cook for 20 minutes. In the meantime, sauté onion in oil until light brown and add to lentils. Add spinach, salt, pepper and noodles. Cook 15 minutes longer. Keep soup on the thick side, but add more water to thin if necessary. Add lemon juice and serve.
