1 lb. dry Lima beans
1 onion, diced
3 Tbsp. oil
6 cups water
Salt and pepper to taste
Wash Lima beans. Add water and boil over medium heat for 1 hour or
until done. Stir occasionally to prevent sticking. Add more water
if necessary. Sauté onions in oil and pour into lima bean soup.
Add salt and pepper to taste. Simmer for 15 minutes. May be served
with lemon juice.
