MARINADE

(For Chicken, Beef or Lamb)

Juice of 2 lemons
1/2 tsp. salt
5 Tbsp. olive oil
1/4 clove garlic minced

Mix ingredients well. Marinate meat or poultry for several hours.

Variations:
1 lb. mushrooms (fresh or canned)
1 bunch parsley, chopped

Wash and slice mushrooms. If fresh, steam in small amount of water
for one minute. Cool and add chopped parsley leaves and marinate.
1 can artichoke hearts drained

Cut artichokes in halves or quarters. Marinate one hour or longer.
1 lb. shrimp (medium or small)
1 bunch parsley, chopped

Peel and boil shrimp five minutes. Cool and cut shrimp in halves.
Add chopped parsley. Marinate.
1 1/2 lb. green beans

Trim beans and boil until tender. Cool. Marinate one hour or longer.
1 can red kidney beans
1/2 bunch parsley, chopped

Combine ingredients and marinate for one hour.
