Laban: 2 quarts yogurt (laban) 1 tsp. flour 1 egg white 1 tsp. salt Sift flour and strain egg white into the yogurt. Add salt and cook on low heat until the mixture bubbles. Stir constantly with a wooden spoon. Remove from heat. Filet: 2 lbs. beef filet sliced 1/2 in. thick 3 large onions, sliced Salt and pepper to taste Butter Brown meat in butter. In a separate skillet, simmer onions until transparent. Arrange meat in baking dish and pour juices over meat. Spread onion slices over meat and cover with 6 cups yogurt. Bake in 350 degrees F oven for 20 minutes. Remove from oven and gently pour in the remaining 2 cups yogurt. Return to oven for 5 minutes more. Serve over rice (Rooz bi Shireeyee). Serves: 4-6.
